Weekend Story

 
Friday
 
Friday Tony and I went to the Warriors game in Oakland! The traffic going into the Bay was hideous and I should have known considering it was a Friday but we got there with an hour to spare and we immediately went inside to our seats. It was both Tony and I's first time at a Warriors game and my first time at a professional sports game and it was so much fun! The Warriors are one of the best teams in the NBA right now and it was so much fun watching them play live, I even joked to Tony it was nice seeing my boyfriends Andrew Bogut and Klay Thompson ;)


 
 
 

 
Quick side note about the above pic: We had actually both been up since 4AM because I couldn't go back to sleep after he went to work. I binge watched Gilmore Girls for 2 hours on Netflix before getting up to go to work! I drank approximately 250% more caffeine than he did on Friday which is why I don't look tired.
 
 
On the way to the game we picked up some Esstarbucks. I took this pic of our his and hers iced coffees. I marveled at the fact that this husband of mine never drank coffee before we dated and slowly but surely I got him hooked.

Saturday
Saturday we went to the gym and then my Mom's house for dinner. Tony left to his friend's house to watch the Pacquiao fight and I stayed back and lounged at my Mom's... I even took a nap in my Mom's bed! My Mom baked some Oatmeal cookies and I prepped some Chicken to fry up on Sunday!

 
I let this Chicken sit overnight in Buttermilk, Garlic, Lemon Slices, Rosemary, Salt and Pepper.
 
Sunday
 
Sunday we went for a quick hike with my Mom early in the morning. We came back to my Momma's house and picked up some Starbucks and Donuts. Because if you exercise before eating donuts it makes them calorie free. Didn't you know?! #denial
 
I painfully watched as my Niners played and it was another ugly win. For the last 3 weeks they have been ugly wins. When will our offense start playing as well as our defense? Anyways, we play Seattle on Thanksgiving and I hope and pray our offense can get something going. Please, pretty please?

 
One thing is for sure though, it was so nice having this guy back. Our pass rush was almost non-existent while he was suspended.
 

 
And my fried chicken came out pretty good!
 
After the game we came home to watch the Walking Dead...
 


And I watched 90 Day Fiance because ain't nothing like some good ole' TLC Reality Shows...
 

 
This week I only work Monday and Tuesday and I am so excited to cook this year for Thanksgiving! I will be making:

Weekend Story

 
This weekend I was happy. It was a happy weekend! I threw my Momma a PartyLite party on Saturday and Sunday cooked and watched football and the Walking Dead (I needed to see my boyfriend Daryl). I even... wait for it... went to the gym Friday night with Tony. I also plan on going to the gym four times this week because I am tired of being jiggly.
 
Friday night we went to the gym and to Chic-fil-a afterwards which is perfectly okay because I went to the gym beforehand, right?
 
Saturday
 
Saturday we went to my Momma's house bright and early! I prepped some food before going to run some errands with Tony, PK and my Momma. Then I set up the Partylite display which ended  being not as dazzling as I predicted because I underestimated the amount of product to bring but it was still real pretty!

For the record, this is what my first PartyLite party setup looked like!
 


 
For the party I made Queso Fundido and a similar take of my Quiche. I used this perfect pie crust recipe and it really is perfect y'all!

Double yum, I used Chorizo and Monterrey Jack for this Queso Fundido. I also added sliced green onions to it because sliced green onions are everything. This pic has a dollop of sour cream on top because I prepped two Queso's on Saturday and the second one I made on Sunday, I added a dollop of sour cream.
 
Saturday we ended up staying way later than we wanted to at my Mom's house before we came home and I passed right out.
 
Sunday
 
I woke up pretty early to get some cleaning done around the house and we left to my Mom's house right after the Niners game begun. I find it to be very painful to watch the Niners play even if they win. Sunday's win was a real UGLY win, but it was a win. There were also some really positive things to take away from it even after our offense couldn't muster up enough for more than 1 measly touchdown after Eli Manning threw 5 touchdowns. Anyways, I was happy we pulled out a win and hopefully next week we can have an AMAZING game and our defense AND offense can click in perfect symphony.



 
 
After the Niners won my brother and Tony watched the Raiders play while I made these....

 Most people don't know this but Chicken Wings are one of my favorite foods of all time. However, I am picky and I like my Chicken Wings homemade either by myself or by my brother, this Sunday I made about 40 of them. YUM! I think I shall post the recipe I made sometime.
 
We came home early for a little Walking Dead action...
 
 
Then this happened...
 
 
We had some Chocolate Mousse Pie at my Momma's house that we never cut into on Saturday and I brought some home... so good!
 
And every since I found out that my home girl Pioneer Woman's show is on Netflix Tony and I have been watching a couple episodes every night. I love watching her!

Mely Cooks Monday - Quiche





I love Quiche, I especially love the gourmet ones that cost $16 at Oliver's, but yesterday I had this wild idea to make a Quiche because I had some eggs in my fridge that needed some loving. So I googled Quiche recipes and I made up with this easy recipe. Unsurprisingly, my lover had never eaten Quiche before so further expanding on my efforts to widen his culinary horizons I knew I HAD to bake a Quiche. Here it is...

 
 
What you will need:
2 Frozen Pie Crusts in a tin, thawed according to direction
5 Extra Large Eggs
8 OZ Shredded Cheddar Cheese
1 Cup Heavy Cream (1 cup = 1 little box)
7-8 Bacon Slices
1 Large Potato
1/2 White Onion
Olive Oil
Salt & Pepper to taste
 
Preheat your oven to 375.

Dice your potatoes and onion into small cubes.
 
Heat up a non-stick skillet and slice your bacon into 1 inch squares. Once the skillet is hot, add your bacon. Cook bacon until it is chewy but NOT crispy.

Remove bacon from the skillet and allow to cool and drain on a paper towel.

Remove the pan from the stove and drain most of the bacon fat from the skillet, reserve about 4 TBSP to cook your potatoes and onions. First add your potatoes and some salt to taste to the pan, cook your potatoes until they start to get soft (about 5 minutes) and then add your onions and allow your potatoes to brown and your onions to caramelize (about another 5-7 minutes). If you find your potatoes are sticking, drizzle with some Olive oil. Once completed, allow mixture to cool.
 
In a large bowl whisk eggs and heavy cream with ground pepper until creamy. Then add your cheese, bacon pieces and your by now cooled onion/potato mixture. Mix well and pour into your pie crust.




Pour your mixture into your pie crusts evenly distributing it between both. Loosely cover both Quiches with foil and bake on top rack for 30 minutes. After 30 minutes, remove the foil and allow the Quiches to finish browning for another 15-20 minutes.

Remove your Quiches from the oven and allow to cool for 10 minutes before digging in.

I must admit, I was really impressed with myself being that this was my first time making Quiche. There's just a couple things I would do differently next time:

~I would use Jalapenos for a kick
~Red Bell Pepper/Spinach for a pop of color
~Play around with the cheeses and meat (Tony requested Sausage next time)
~Add some Garlic for a little flare
~Make my own pie crust and make one deep dish Quiche as opposed to two regular sized Quiches

I encourage you to try this recipe out and play around with the ingredients to make it your own!

Weekend Story

Friday
Friday I went to check in on my little Ches who had just had surgery on his bladder stones and was staying at the hospital for observation. Poor little man! After the vet I went home to Tony and came to my Momma's house for a while.

Saturday

Saturday Tony and I took PK my wittle seester to her soccer game. They lost but she played well and so did her bestie. I was super proud of her because she has come a ways since she first started playing soccer. After the game we hit up In-N-Out for some tasty burgers and then came home and hung out for a bit. Later in the evening we had to take Chester to get checked on by the vet and from there Tony and I took PK to a family party of Tony's. We only stayed for a couple hours, PK felt uncomfortable. She wanted to spend the night and we went home and rented Transformers, Age of Extinction. PK only lasted halfway through the movie, children these days, they can't hang.

 
 
Sunday
 
Sunday it was donuts, Starbucks, breakfast and football at my Momma's house. The Niners won a tough game and I almost had a brain aneurism watching the dropped coverage and Jimmy Graham burn our secondary. AHHH Football, can't live with it, can't live without it.

Back home we watched The Walking Dead, and I was kinda dissapointed my boyfriend Daryl Dixon wasn't in the episode considering he is the main reason I watch...
 

 
 
Today I had my first red cup of the season. I don't usually order hot drinks from Starbucks but I had a free reward so I got a Caramel Brulee Latte. #whynot

 
And tonite I shall make a Quiche!

Happenings + a Weekend Story

 
I have been terrible about blogging current happenings lately. So much is going on and this past week felt like a whirlwind.

Weekend of 10/31-11/2
 
Friday - Halloween
Tony and I didn't dress up for Halloween and we stayed home for a quiet night in. We hit up Applebee's for late night happy hour and I had a couple drinks and we came home and went to sleep!
 
Saturday
Saturday I was supposed to go to Napa for lunch with an old friend. She ended up taking a rain check because she wasn't feeling well. So I stayed home and cleaned up a bit before heading to PK's game and watching her team kick butt! After the game Tony and I went to pick up a cupcake at my favorite cupcake place and then we went home. My mother in law made tongue tacos and I invited my Pops over for tacos.
 
Sunday 
Sunday Tony and I split ways, I went to my Momma's house to make Chicken wings and cheese bread and watch the 49ers game with my brother and Tony went to watch the Raiders game at his cousin's house.
 
Monday
Monday I called in sick to work, later on in the day I made some Enchis. They came out super tasty and not spicy at all.



Wednesday
 I made Paninis!

 
Okay, Okay so maybe I don't have a Panini maker but I wanted to make this happen anyways!
 
The rest of last week was a blur. I have been having this major "where is my life going? what are my long term goals? how could I better myself?" crisis for the past month and I feel like I need to regroup! I am trying to get back to basics and try to be more positive and overrall I want to be more thankful. I need to be more thankful for what I ALREADY have as opposed to placing so much pressure on myself to achieve so much more in so little time.
 
Stay tuned, I am making a Quiche on Mely Cooks Monday (if I can get out of going to the gym with my Husband, I hate the gym... wah!)
