Best Oatmeal Raisin Cookies

As mentioned in my weekend story, I recently discovered the BEST Oatmeal Raisin Cookie recipe EVER. These are soft and textural with just the right amount of Cinnamon and Vanilla balanced beautifully. I can't express my love for these and how badly I want to make them again. Make them and you will thank me later!
 
Yields 2 dozen
 
1 cup (2 sticks) salted butter, softened
1 cup brown sugar
1/4 cup granulated sugar
2 large eggs, room temperature
1 TBSP Vanilla Extract
1 1/2 cups AP Flour
1 TSP Baking Soda
1 1/2 TSP Ground Cinnamon
1/4 TSP Salt
3 cups Old Fashioned Rolled Oats
1 cup of Raisins


 
Using a hand mixer beat the butter and sugars together until smooth. Add the eggs until combined and then add the Vanilla. Scrape down the sides and make sure everything is incorporated to a smooth creamy batter.
 
In a seperate bowl combine the Flour, Baking Soda, Cinnamon and Salt. Mix together with a fork.
 
Now combine the wet and dry ingredients and mix on on high with your hand mixer. Once blended add the Raisins and Oats and continue to blend until everything is mixed together well.
 
Chill your dough for 45 minutes. Your dough will be very sticky!
 
Once your dough is chilled, preheat your oven to 350. Then using a rounded tablespoon, drop balls of dough (a heaping TBSP amount each) onto your cookie sheet about 2 inches apart. Bake your cookies for about 10 minutes each sheet until golden brown around the edges and the centers look slightly undone.
 
Once you remove your cookies from the oven it's important to let them cool completely because these beauties are meant to be really soft and therefore would be slightly mushy while hot or warm.
